Get Your Groove ON!

We have reached the last quarter of 2011~ have you found your groove yet?

This is not by any means a challenge…I am simply hoping to inspire you!

Why do we struggle on a daily basis to eliminate the unnecessary clutter in our lives? Why do we also delay doing the things that will undoubtedly make our lives more simple and enjoyable?

None of us are exactly alike, and therefore what works for one person may not work for another, but if you are honest with yourself about what you really need on a daily basis to be happy, healthy and productive, you can’t help but find your GROOVE. As a matter of fact- it will find you!

The trick is to be honest about what you really need. Do you really need that bakery muffin? Does an hour on facebook really make you more productive? Does an hour or two of heavy spinning really make you healthier?

I cannot answer these questions for you- and your questions may be different anyway! Again, I am hoping to inspire you to ask yourself…are you doing what you need to be doing every day to be what you want to be? I encourage you to consider each day as a valuable gift. You get to live it once, so clear your path, drop any drama, and live each and every day in YOUR groove!

And PLEASE do not wait for the new year to resolve to find your own personal groove! You still have 1/4 of 2011!

Rockin’ Rice and Beans!

I concocted a vegetarian powerhouse meal tonight that I thought I’d share with you guys- in celebration of Fall! (and eating great food too!) For the benefits of these ingredients, check out Holly’s Simple Kitchen!

Start with 2 cups cooked brown rice, 1 can soaked and rinsed black beans, 1 cup fire roasted corn kernels, 1/2 cup butternut squash (cubed into small pieces and boiled), and 2-3 servings of turnip greens. You will also need a spice blend like Mrs. Dash’s Salt Free Fiesta Lime, or a “Mexican” style seasoning of your choice, cilantro (chopped fresh or dried), and onion powder.

In a saute` pan over med.-low heat, add 2-3 TBS canola oil, the rice, beans,  and the “Mexican” style seasoning to your desired strength. Mix to incorporate the spices, then add the vegetables and about 1/4 cup of water. Stir together and cover to wilt the greens. Lower heat to low. Add onion powder and a sprinkle of cilantro to taste, (and any additional seasonings you may like!). Stir 1 more time to avoid scorching the bottom layer. Remove from heat and ENJOY! And as always…

The Great Cereal Debate!

To reflect on the recurring topic of last week… CEREAL. To eat it or not to eat it- that was the question.

Technically, yes. (We should be grateful to even have the opportunity to ask ourselves that question!)  There are, however, some cereals that provide more nutrition than others. As I cover in my cookbook, Holly’s Simple Kitchen, there are different kids of carbohydrates from which we derive nutrition. Unfortunately, most cereals are loaded with refined sugar, a bad carb that is a highly addicting ingredient and will almost certainly lead you to experience a blood sugar “crash”. It will also undoubtedly make you crave more food.

When is the last time you had 1 serving of your favorite cereal? No, seriously- 1 serving. A single serving usually looks more like a topping than a meal… just saying. So if you must indulge in some crunchy goodness, please check the nutrition label and stick with cereals that contain less than 10 (or preferably less than 5!) grams of sugar, some dietary fiber, and is made of ingredients that you can pronounce!

If you want more information, explained simply, please check out my cookbook!
